PORTLAND (WGME) -- If you can stomach some bugs, then bon appétit.
Maine's first insect dinner was served Monday at Bao Bao Dumpling House in Portland.
One dish combined vegetables with toasted crickets and chili vinaigrette.
Another combined bacon and jasmine rice with garlicky meal worms.
There was also a meal that mixed another type of worm with scallops.
Bao Bao's co-founder Zachary Pratt teamed up with Entosense to make it happen.
Pratt says he wants to raise awareness about the worldwide need for new sources of protein as the world's population continues to grow.
"We're just looking to show that edible bugs are something that are the food of the future and I am here to help with that so we are showing that to Portland, Maine,” Pratt said.
"For example, grass hopper has three times as many omega-3's as salmon, there is niacin, iron, more calcium than milk, and like they say, more iron than spinach,” Entosense President Bill Broadbent said.
They say meat like beef and pork also uses more natural resources than insects to grow, which negatively affects the environment.
The meals at Bao Bao are not a permanent feature on the menu. It was just a one-time thing Monday.
